Cooking Mexican Chorizo
Chorizo is cooked unlike any of our other sausages. Instead of cooking it in the casing, you should actually cut the casing open and squeeze the contents into a frying pan or griddle to cook them.
It’s a pretty simple process. Squeeze the contents of a chorizo into a hot pan - you can just cut open one end and squeeze the contents out like toothepaste. Flatten the chorizo into an even layer and cook the chorizo over medium heat. A little liquid will cook out and boil away at first. This is normal. After it seems browned on one side, flip it with a spatula and cook until it is firm and crumbly. That’s it!
Then use it in any one of my Chorizo recipes under the recipes link.
