How To Cook St. Louis Ribs and Rib Tips

In our farm’s butcher shop, we separate the Ribs from Rib Tips which results in a cut known as St. Louis Ribs.

Ribs are just wonderful to cook and enjoy. You can make wonderful ribs without a grill. The key is to slow cook them.

First, salt and pepper the ribs. Wrap them securely in aluminum foil and place in a pan w/some liquid. Put into an oven pre-heated to 275 degrees. Cook for 2 – 2.5 hours. Remove from the oven. Take off the aluminum foil and slather with your favorite sauce or dry rub. Return to oven at 475 degrees to brown the ribs.
