We are loving our weekly pork delivery. Last week we made a wonderful white bean, kale and sausage soup. Hubby is making us wonderful sandwiches with the ham, bacon, and rillettes. I just love the variety and inspiration for us to find new and tasty recipes.


I wanted to drop you a line and let you know how much I’m enjoying the CSA so far. I was excited to get another pack of bacon in this week’s share, and I wanted to assure you that it is both beautiful and incredibly delicious. I’d eat it (and look at it) over commercial bacon for the rest of my life without thinking twice. I can’t wait to cook some up tomorrow morning!
Keep up the good work and thanks again for everything so far. Thursday is my favorite day of the week!

All of us here were filled with joy when we got to work to find our little packages. We tore them open and compared our gifts. A delight. I’m saving most things for the weekend. I got sausages, which look amazing, and was happy to see the cooking directions on your site. Very, very good to know.


Picked up my share last night - it’s soooooo much fun to open the box of goodies:-) Wow, the salami is yummy!! And I made your sauted Pate with onions and apples for dinner last night - awesome!!


Heather, I am eating a ham and swiss sandwich right now, using the ham from my share, and I am officially ruined on regular lunch meat ham forever. This stuff is so amazing–it’s almost like pulled pork cold cuts. Delicious!! Thanks for making this happen. I am loving it!


Oh Man, those country style ribs were amazing! Changed the way we think about food. We sat inside last night, watched the snow and cooked them up perfectly. What a great meal. Thanks!


I’d like to mention how good the CSA has been so far. We have really enjoyed the new treats and old ones. Several things we have never tried before and they are great. The rillettes are YUMMY. The salami is spiced just right. The cranberry sausage has been a treat. It is lots of fun to open our box each week to a new surprise.


Just a note to let you know that I particularly enjoyed this week’s newsletter: I’m looking forward to the pulled pork and I’m going to try your soup recipe, too.

Please, please, don’t feel sad about the bacon. I’m new to Piggery bacon and when I opened the first two packages they looked exactly as I expected them to look - NOT store-bought. The pork flavor, lack of chemicals, and not-too-saltiness more than makes up for ragged edges,which I hadn’t even really noticed!

Also, we ordered 2 hams for Christmas dinner for fifteen. What a hit, absolutely delicious! My mother, who is over age 70, insisted on contributing a store bought spiral ham. I think she had secret doubts about my Piggery raves. Anyway, let me assure you that the Piggery ham was completely gone and the only leftovers were from the store-bought ham. (So I was really glad to get more ham pieces in last week’s share.)


For the record, we think that your bacon is lovely often give it as a hostess gift with pride. It’s artisan bacon. Embrace it’s uniqueness!


I just wanted to check in and say thank you for the CSA, we’ve been enjoying it so much! It’s been great to get all these different things in our box each week, and to figure out new recipes for cuts or ingredients that we may not usually buy. The new salami was fantastic, it reminded us of the fresh salami you could find in Germany, like nothing you can get from a supermarket. We’re looking forward to the pulled pork, that sounds like a perfect treat for the college football championship game tomorrow night. I’ve also been enjoying your newsletters, it’s very interesting to hear a bit about life on the small craft farm, especially as I’ve been reading The Omnivore’s Dilemma - I can read a chapter, get depressed, then feel good about myself by frying up some sausage. On another note, our dog Maya’s new most favorite thing in the world is to clean out the pâté jar, her eyes get huge and her tail wags away as she furiously licks it clean (of course, only after we can’t get any more out with a knife!).


Wowee kazowee! Thank you for all the little treats! It really is so much fun diving into our box each week.

We just ate those delicious cranberry sausages!!!! Oh my goodness gracious…they were absolutely the most delicious!!!! Thank you so much.

We too LOVE the rillettes. I think they are our favorite thing we have gotten in the shares to date. And that is saying something.


We’re enjoying our membership so much, and we’re talking it up among our friends here and in NYC. I’m almost as excited about the little jars the pate and rillettes come in as I am about what’s in them. They’re perfect for holding balsamic reduction, seeds for sprouting, bulk spices, travel-size amounts of cornstarch (for dry shampooing) … I’ll let you know if I come up with something else.
Anyway, everything has been delicious and wonderful. You guys are doing beautiful work and I hope things continue to go well.

…OMG today’s chops were frakking awesome!!!


I made pulled pork last Sunday from the Piggery’s Boston Butt. I rubbed it with a rub from McClard’s (a kinda famous Arkansas BBQ joint) and then basted it with an apple cider /cider vinegar spray and finished it off with a North Carolina-style vinegar sauce. IT WAS AWESOME. I regret that I have but one life to dedicate to my Weber. And your charcuterie.


Just wanted to let you know that the sausages were so DELICIOUS, we literally licked our plates!!!


Just wanted to let you know how much we enjoyed our “Easter” ham. I poured some of our cider in the bottom of the pan, scored the fat and let it bake, basting it occasionally with pan juices. I considered a glaze but the crisp fat was too beautiful to cover up. And, of course, it was simply delicious, is making great sandwiches and just pickings and will soon be in the bean pot. What a treat!


By the way…. the best chorizo I’ve ever had!


I got the tenderloin this weekend at the farmers market and it was AMAZING (my friends who came over for dinner would attest to that as well)! I’m not the best cook, but it came out tender and super flavorful. I seared it with just olive oil in a cast iron pan and threw it in the oven to finish it up, even without herbs or spices it smelled so good. Threw together some fig/wine sauce and the whole thing was gone in a flash.

It’s unbelievable how much more tender and flavorful it was compared to conventional pork. I


After hemming and hawing a bit, I bought a pork belly last Saturday morning, and I don’t have the words to describe how wonderful it was! (I rubbed the fat side with kosher salt, pepper, a bit of brown sugar and soy sauce and braised it in a little chicken broth, then uncovered it to let the fat get crispy - simply YUM!)


We ate the brats last night, and they were fantastic! Your husband is a genius! They were wonderfully seasoned and didn’t fall prey to the all-too common mistake common to sausages of being overly salty.


PS - the pate is incredible.

PPS - Will you have pate available for xmas season? A party must-have (I know, I sound like Martha : )
